Isolation and characterisation of enzymes and genes involved in the biosynthesis of 2,5-dimethyl-4-hydroxy-3[2H]-furanone (Furaneol)

2,5-Dimethyl-4-hydroxy-3(2H)-furanone (Furaneol) belongs to the ten most valuable aroma components worldwide. It represents a key odorant among the chemically synthesized aroma compounds. A higher economic value is expected by a biotechnological production e.g. application of enzymatic processes. Therefore, this project is concerned with the investigation of the biological formation of 2,5-dimethyl-4-hydroxy-3(2H)-furanone in strawberry fruits and the yeast Zygosaccharomyces rouxii.
