Flavor and aroma formation in strawberry fruits (Fragaria x ananassa)

Due to its attractive odor quality and high aroma intensity 2,5-dimethyl-4-hydroxy-3(2H)-furanone (Furaneol) belongs to the ten most valuable aroma components worldwide. Until now, however, the basics of the biosynthesis and metabolism of 2,5-dimethyl-4-hydroxy-3(2H)-furanone in plants are unknown. The project deals with the investigation of the biosynthesis and metabolism of 2,5-dimethyl-4-hydroxy-3(2H)-furanon in ripening strawberry fruits, especially the formation of 2,5-dimethyl-4-methoxy-3(2H)-furanone by a fruit-specific O-methyltransferase (OMT).
