Abstract:
Octane-1,3-diol (1) and 5-(Z)-octene-1,3-diol (2) are typical secondary fruit constituents of apples exhibiting bacteriostatic and fungistatic effects. The enantiomeric ratio of the chiral compounds 1 and 2 including their glycosides as well as the derivatives ethyl 3-hydroxyoctanoate and ethyl 5-(Z)-3-hydroxyoctenoate was determined and feeding experiments with isotopically labeled postulated precursors were performed to elucidate their biosyntheses.
